Does anyone have an example of how to poll an email account?

Hello Marty,

Are you looking for a trigger example or task example?

In version 11, we have a email trigger now. So you can have a workflow trigger when, for example, when an email is received.

Or you can set a schedule trigger to run a workflow every, again just an example, 15 minutes. Within the workflow, you can check for new emails using our "get message" actions.
