We have been evaluating Automate BPA Server as a solution to replace various scripts, SSIS jobs an Windows scheduled tasks. One of the selling points was that it could do everything without scripting but we are finding as we use the prouct more that certain things can only be done by 'hacking around' with the XML AML files.

Is it unrealistic to expect that all jobs can be created from within the GUI?

There is hardly ever a requirement to edit the .aml files directly. The Task Builder writes to the .aml with all of the attributes necessary when an action is added to a task.
