Like the Title says, I would like to know if it is possible to create something similar to MS Access reords in Automate.

What I would like to do is to either put certain messages or even make certain tasks run on specific dates

For example

Value1 Value2

"Do stocktake" 20/6

"pick up custom order" 5/07

"Order ABC from XYZ" 30/07

This way, I could run a task to check todays date with the dates in Value2, and pop up those messages (or run a task) when todays date=%value2%

This way, I can turn automate into a kind of automated calendar

Just need help creating the database/records.
Is this possible ?

This is possible however I'm not sure you want AutoMate creating the database records. You can create the records in any database that has the appropriate ODBC drivers installed for AutoMate to access it or you can create a flat file (.xls, .csv) and have AutoMate parse that flat file. You can then run a query against the repository and parse the columns as you have explained.
